New England Clam Chowder 8 servings
4 slices bacon, chopped 2 cups chopped onions 4 cups cubed potatoes 2 tsp. salt 1/8 tsp. pepper 2 cups water 2-8 oz. cans minced clams 1 qt. light cream 1/4 cup butter
Saute bacon and onions in p.c. over medium heat. Add potatoes, salt, pepper, and water. Close cover securely. Place pressure regulator on vent pipe. Cook 5 minutes @ 15 lbs. pressure. Let pressure drop of its own accord. Drain clams. Slowly add clams, 1 cup clam liquid, cream and butter. Stir constantly. Simmer 10 minutes in open pressure cooker.
