Pork Chops in Pressure Cooker

4 thick or thin pork chops
4 lg. Russet potatoes, peeled and sliced thick
1 lg. onion, chopped
1/4 cup water
Salt and pepper
Oil

In a pressure cooker, add enough oil to coat bottom. On medium-high,
brown the chops, usually 2 at a time, until nicely browned on all
sides (I do this at relatively high heat cuz it's faster and it
renders a better gravy). Remove cooker from heat and carefully
add the sliced potatoes, being careful not to get splattered with
grease. Mix the potatoes thoroughly to coat with the drippings.
The browner the drippings, the better the gravy! Add about 1/4
cup water and mix again. Pour in the onions and stir all. Salt
and pepper if you wish. Put the chops on top of the potatoes;
salt and pepper again if you wish. Close the cooker. Put back on
the heat and reduce to medium. It will take quite a while to bring
up to pressure. Once at pressure, cook for 15 minutes. Put cooker
under running water and tap to reduce pressure quickly. Remove the
chops and spoon out the potatoes. The chops will fall off the bone
and be nice and moist and the potatoes will be in a nice gravy.

These make really tender chops, but you might want to try adding a bit more seasoning to spice this great, but a little bland, recipe.

My mom made this recipe when I was a kod, however, she always added a can of Cream of Mushroom soup, whihc made for a great tasting sauce to top the potatoes.

I think you can't beat this recipe for the time involved and ease of preparation. The only I might do if I made it again was to add carrots to it.

This is not a fancy recipe, but it tastes very good. The pork chops get very, very tender. The only change I would make is to cut the potatoes in quarters or large chunks rather than slices. The slices get a little too mushy for me. Other than that, it was great. My family has asked me to fix it again.
