Pork chops with sliced potatoes
4 pork chops (thick center cut chops) 4 large potates sliced (2" cubes) oil 1/2 cup water onion soup mix fajita seasoning Spice blends "Monterey" (roasted garlic & red bell pepper)
Place enough oil in pan to cover bottom. Heat on high, brown chops all over as much as possible. Remove chops to a plate. Turn heat down to medium. Carefully add potatoes and toss in oil. Add 1/2 cup water, toss again. Sprinkle a 1/2 package of onion soup mix on top of potatoes. Place chops on top of potatoes. Sprinkle chops with fajita seasoning, then top with Monterey seasoning to taste. Seal lid and bring up to a gentle rock over medium heat (this takes awhile at a lower heat, if you cook too high the potatoes will burn). Once you get the rocking, set timer for 20 minutes. Cool immediately in sink with cold running water. Serve immediately.
