Brown Rice

2 C chicken broth
1 C brown rice
1/2 Onion, chopped
1-2 T butter or margarine
1/2 C celery, chopped
!/2 C carrots, shredded

Melt butter in sauce pan. Add onion, celery, and brown rice.
Saute for 10 minutes or so until some of the rice begins to pick
up color from the sauteing. Add chicken broth and carrots, cover
and simmer on low for about an hour...check at 45 mins and if seems
too dry, add some more broth or water. Salt and pepper to taste.
The cooked rice should be more "sturdy" than white rice, but not
crunchy or hard....It has more texture than other rices.
