Coconut Basmati Rice
1 1/4 c water
1/4 tsp salt
1 c basmati rice, uncooked
1 piece cinnamon stick (1-1 1/2" long)
1/2 c coconut milk
1/4 c currants or raisins
1/2 tsp turmeric
1 dried chile (optional)
In heavy saucepan with fitting lid, bring water to a boil. While
water heats, rinse rice well.
When water boils, stir in remaining ingredients. Return to a boil.
Stir, cover, and reduce heat to low. Simmer 15 minutes.
Remove cinnamon and optional chile, stir to fluff rice, and serve.
