Turkey Congee

1 turkey carcass
1 inch lump ginger
2 green onions
3 1/2 quarts water
2/3 cup rice. washed till water runs clear
salt to taste

white pepper
Soy sauce
Asian Sesame oil
Chopped green onions
Cilantro

Chop turkey carcass into large pieces, place in a large stockpot
with water, ginger, green onions.Bring to a boil ,cover and simmer
or 2 hours. measure out 8 cups of stock. Strain and remove any fat.

Put rice in deep saucepan, add the turkey stock and bring to a
boil, reduce heat to low, and simmer till rice thickens to porridge
consistancy, about 1 1/2 hours, stirring occasionally.. The jook
is ready when there is no separation of rice and liquid. Season
with salt and pepper, serve with the condiments.
