Print this Recipe    SEASONED RICE (Jamaican)

2 cups rice
1/2 pound salt beef
1/4 pound pigs tail
1 medium carrot
1 small egg-plant (1/2 pound)
1 tablespoons fat
sprig of thyme
1 onion
2 oz cabbage
1 large tomato,
1 hot pepper
salt to taste
4-5 blades of scallion
4 cups water

Soak salt beef in water for 1/2 hour. Cut into pieces and cook in 4 cups of
water for 45 minutes or until tender. Wash and dice carrot and egg plant. Cut
onion, tomatoes and cabbage finely. Wash scallion, add to carrots and meat
and cook for 10 minute. The add greens and egg plant and cook for 5 minutes.
add rice. seasoning and margarine or butter. Cook about 25 minutes or until
rice is tender. Serve hot.

yes i agree... we dont cook stuff with eggplant. A seasoned rice jamaican style is cooked with saltfish, ackee and other thing plus with coconut milk not what that is above

Whoever put this recipie online is not a Jamaican.We do not cook anything that horrible.We are a spice island and know how to cook seasoned rice,not slop.That recipie should be pull from marked as a Jamaican recipie.That i dishonourable.
