VEGETABLE PILAU

5 T. butter
2 onions, chopped
2 bay leaves, crushed
1/2 tsp. cinnamon
1/2 tsp. cloves
1 tsp. grated ginger
1/2 c diced potato
1/2 c cauliflower
1/2 c peas
1/2 c sliced carrots
1/2 c green beans
1/2 c zucchini
1/2 c chopped bell pepper
2 1/2 c. white rice
1/2 tsp. saffron
5 c. water
1/2 c. cashews
1/2 c. raisins

Saute onion and bay leaves in butter until onion begins to color.
Add cloves, cinnamon and ginger, stir for a minute. Add prepared
vegetables, rice and saffron. Toss over medium heat for 5 minutes,
then add water and 2 tsp. salt. Bring to boil, turn heat to low,
cover tightly and cook for 25-30 minutes. All water should be
absorbed. Add cashews and raisins and gently mix everything.
Spoon mixture into well-oiled casserole dish and bake at 350F for
about 20 minutes.
