Rice Balls

1/4 c oil
1 onion, minced
2 c short grain rice, cooked
2 eggs, beaten
2/3 c Gruyere cheese (or other), grated
2 Tsp flour
1 tsp curry
salt and pepper
3 Tsp dry breadcrumbs

In heavy skillet, heat 1 Tsp of oil and sautee onion. In bowl combine
onion with rice, eggs, cheese and seasonning. Mix well.

With wet hands, shape rice in eight balls (make them very tight). Roll
in breadcrumbs.

Heat the rest of the oil in the skillet and fry rice balls about 15
minutes. Serve.

4 servings.
