Rice with fruit and nuts
1 1/2 c. raw white rice (calrose or basmati)
2 cloves garlic
3 c. water
pinch salt or veggie bullion cube
black and/or gold raisins
dried cranberries (optional)
slivered almonds and/or cashews
handful of mushrooms
1/2 cup broccoli florets, chopped
1 tbs. olive oil
Chop the onion, mince the garlic. Saute in olive oil until soft.
Add the rice, water, and a pinch of salt (or a veggie bullion cube),
and bring to a boil. Add mushrooms (sliced), broccoli, raisins,
cranberries, nuts, 2 tsp. curry powder, 1/2 tsp turmeric, 1/2 tsp
cumin stir, cover, reduce heat, and cook for 20 minutes.
Variation: Add cubed zucchini, quartered roma tomatoes, cauliflower,
1/2 cup shredded cabbage, etc.
