Mexican / Spanish Rice
serves: 4 - 6

1 lb. pork sausage, broken into chunks
1/2 green pepper, chopped
1 cup long grain rice, uncooked
1 envelope enchilada seasoning
16-oz can stewed tomatoes
2 cups water
2 Tbsp canned chopped green chilies
1 pkg frozen green peas

In large skillet, cook sausage for 5 minutes, stirring occasionally.
Spoon off all but 2 Tablespoons of the drippings. Add green pepper
and rice. Saute for 2 minutes, stirring occasionally. Add enchilada
seasoning, stewed tomatoes, water, and green chilies. Heat to
boiling. Reduce heat. Add green peas, cover and simmer for about
15 minutes.
