Spanish Rice

1/3 cup olive oil
1 cup brown rice
1/2 cup whole stewed tomatoes
3 cups beef broth, canned okay
1/2 cup green onion, sliced
1 tsp oregano
2 cloves garlic, crushed
1/2 tsp salt
1/4 tsp pepper
1/4 tsp cumin

Start oil in frying pan. Add rice (have oil cold when adding rice).
Pay close attention, stirring as the rice browns. (It burns quickly,
and all you want to do is brown it!)

After rice is a golden brown, squeeze in the stewed tomatoes,
leaving them in irregular chunks and sizes. (IMHO This squeezing
in of the tomatoes adds character to the finished dish. Each forkful
will be a delight!) Add broth, onions, oregano, garlic, salt, pepper
and cominos (cumin). Cover and simmer for 30 minutes.
