Spanish Rice

1/2 cup finely diced onion
1/4 cup finely diced green bell pepper
1/4 cup finely diced celery
2 cloves garlic minced
2 tbsp vegetable oil
1 cup long grain white rice
1 tsp ground cumin
1 1/2 cups Chicken broth
1/2 cup canned tomato sauce or tomato puree

Saute the veggies in the oil over medium heat until the onions
become translucent, about 5 min. Add the rice and cumin. Cook
5 min. more stirring frequently. Add the broth and the tomato
sauce. Bring to a boil, then reduce to a simmer, cover and cook
15 minutes.
