Spanish Rice with Beef
Serves 6

2 tablespoons butter
1 medium onion, finely chopped
1 pound ground beef
1 lb 13 oz can tomatoes, undrained
1 teaspoon salt
1 teaspoon celery salt
1/4 teaspoon pepper
1 tablespoon sugar
3 cups cooked rice
2 cups grated American cheese

Preheat oven to 325 degrees. Grease 2 1/2 quart casserole. Melt
butter in large skillet; sauti onion and beef, stirring occasionally,
until meat is browned and crumbly. Add tomatoes, salt, celery
salt, pepper and sugar; simmer for 20 minutes. Remove from heat.
Stir in rice and cheese. Turn into casserole. Bake in preheated
oven for 1 hour. Keep in warm place for 20 minutes before serving.
