Quantity serves 3-4 people as an accompaniment
300g (10 1/2 oz) Basmati rice 550 mls (1 pint) cold water 1/2 teaspoon salt (if you want)
Do NOT wash the rice! Put it on a large plate and pick it over, removing any strange looking bits, small stones etc. Put the rice and cold water - with the salt if used - into a large saucepan with a well-fitting lid. Bring to the boil, turn down the heat and simmer for 10 minutes, then take the pan off the heat and leave it to stand for 5 more minutes, all without taking the lid off! Fluff the rice gently with a fork before serving. In my experience, Basmati tends to be a little more yielding in texture than regular long grain rice, but this is not a cooking fault.
