Basmati Rice
serves 3-4 people

300g (10 1/2 oz) Basmati rice
550 mls (1 pint) cold water
1/2 teaspoon salt (if you want)

Put the rice and cold water - with the salt if used - into a large
saucepan with a well-fitting lid. Bring to the boil, turn down
the heat and simmer for 10 minutes, then take the pan off the heat
and leave it to stand for 5 more minutes, all without taking the
lid off! Fluff the rice gently with a fork before serving.
