Sushi Rice

2 cups Kokuho Rose rice
2 1/5 cups water (10% more water than rice)

Wash thoroughly to remove powder 1 hour before cooking and
let drain. Cook in rice cooker.

vinegar = 10% of amount of rice (2 and 2/3 tablespoons)
sugar = 40% of amount of vinegar ( 1 and 1/2 tablespoons.)
salt = 15% of amount of vinegar (1 teaspoon full)

Mix vinegar, sugar and salt together and set aside to dissolve.
Allowing rice to sit in rice cook 15 minutes.

Put all rice in big bowl, (still warm) sprinkle vinegar mixture
over rice and mix fluffy. Rice should be smooth but not sticky.
As it cools it will get stickier so make your rice balls or sushi
rolls when warm. It is easier to handle.

You may use a fan to cool the rice but it may not be necessary.
