Cyberbluecheese dressing
What an extraordinary thing the Internet is! There I was, craving homemade Blue cheese dressing and, within minutes, I found myself with a multitude of choices on this recipe network.
I read them all, looking for the Secret of what makes blue cheese dressing great. Some of them sounded pretty bland. Others had some interesting twists. Understand that I come from the "Emiril school" . . . add a little extra of the fun stuff And always, always try to "kick it up a notch"!!!
The first secret to blue cheese is that none of these amounts are written in stone. Play!
2. Don't flinch on the fat. This is blue cheese dressing. Splurge!
3. The general ratio is about 3 parts mayo and 2 parts sour cream. I.e. A little more mayo than sour cream.
4. Most of the recipes implied that a mixer was needed. I chopped my blue cheese by hand and just mixed it all with a fork. It tasted great!
5. Most of the recipes say to "chill for 24 hours". Who can wait that long? I ate mine right away (I was hungry!) but I'm sure it will taste better today now that the flavors have mingled.
So, bottom line, get the general items below in a bowl, mix 'em, pour it on a salad and enjoy! 1 tsp. worchestershire sauce (adds character) 1 tsp fresh lemon juice (I added extra for more tang) 2 TBL White Vinegar (gives it some bite) 1 tsp. Grey Poupon mustard (sounded better than dry) 1/2 tsp. black pepper 1 tsp sugar (smooths it out a little) 1/2 tsp onion salt 1 clove garlic (crush & then mince) 1 TBL fresh onion minced 3/4 cup sour cream 1 1/3 cups mayonnaise
I mixed the liquids and spices first. Then added the mayo and sour cream. Mixed that and then the cheese.
8 oz. crumbled Blue Cheese - Use plenty if you like blue cheese, which of course you do if you're following this recipe!
Refrigerate, if you have the will power.

I have tried to make a decent Blue Cheese Dressing for years.
