Bleu Cheese Dressing
1/2 cup, (3-4 oz) crumbled blue cheese 2 tablespoons red wine vinegar 1/4 cup heavy cream Salt to taste, if desired Freshly ground pepper Put the cheese in a bowl and mash to a paste with a fork.
Add the vinegar and beat with a wire shisk until blended. Continue beating with whisk while adding the cream. Add salt and pepper to taste.
Yield: about 3/4 Cup
