Ceaser Salad Dressing

2 green onions, finely chopped
2 garlic cloves, finely chopped
1 tablespoon of Dijon mustard
1/4 of a cup of wine vinegar (red or white, as you prefer)
1 large egg
salt, pepper, parsley (to taste)
1 cup olive oil (or your favorite)
Crushed anchovies filets (if you like them)

Beat egg with mustard, green onions, garlic and spices. Add oil
slowly and mix well with a whisk until creamy. Add vinegar at the
end.

1 head romaine lettuce, shredded in small pieces
Your favorite croutons
Shredded Parmesan Cheese (or mozzarella if you don't like Parmesan)
Bacon bits

Mix together with dressing and serve. Put remaining dressing in
the fridge up to a couple of weeks
