Low Fat Caesar Dressing
Yield - 1 1/2 cups

1/2 c buttermilk
1/2 c nonfat plain yogurt
1/4 c parmesan cheese, freshly grated, about 3/4-oz
1/4 c lemon juice, fresh
2 shallots, chopped
3 cl garlic, minced
3 anchovy filets, drained, minced
2 ts lemon peel, grated
1 t fresh oregano, chopped
ds Worcestershire sauce (generous dash)

Combine all ingredients in blender and blend until creamy. Season
to taste with salt and pepper. (Can be prepared 3 days ahead.
Cover and refrigerate. Bring to room temp before using).
