Japanese Carrot Dressing:
1 small carrot, shredded 2 tablespoons mirin 2 tablespoons rice vinegar and/or cider vinegar 1 tablespoon soy sauce 1/2 tsp dark sesame oil 1 tablespoon grated fresh ginger root 1/4 cake silken tofu (about 3 ounces) 2 carrots, grated, optional fresh ginger, grated, optional
Blend all ingredients in a blender. well and will keep for a few days.
