LEMON - LEEK SALAD DRESSING
Makes 1 1/2 cups.
1/2 cup olive oil
3 Tbs. white wine vinegar
3 Tbs. fresh lemon juice
1 medium leek, white part only, cleaned and finely chopped
1 egg
1 Tbs. chopped shallot
1 Tbs. Dijon-style mustard
1 tsp dried tarragon, crumbled
1/4 tsp. salt
1/8 tsp. freshly ground pepper
Whisk in bowl. Chill for several hours before serving. Pour over
strong flavored salad greens.
