Walnut-Basil dressing ------------------------------------ (not extremely lo-fat 'cause of the nuts, but when used on a salad, the %CFF is pretty low)
1 Tablespoon coarse Dijon Mustard 1 Clove Garlic, chopped 1/3 Cup Red Wine Vinegar 3/4 Cup Basil, Fresh (or significantly less dried basil) 1 Dash Pepper, fresh ground 1 Tablespoon Sugar 1/2 Cup Fat-free mozzarella cheese, finely grated 1/2 Cup Walnuts
Blend everything but the walnuts in a food processor. Add walnuts and grind until still rather chunky.
Orange Tarragon dressing (no fat) ------------------------------------------------------ (especially good with bitter greens)
1/3 cup balsamic vinegar (or red wine vinegar-different taste, prettier color) 1/3 cup orange juice (fresh or not-from-concentrate) chopped tarragon or mint marigold (I never measure it, just maybe 1/3 cup frozen) fair shake of freshly ground black pepper
Just blend and let sit for at least a few hours (a couple of days makes it better). This is reeeeally tart *and* sweet, so a very little goes a long way.
