Vinaigrette Dressing

1-2 cloves fresh garlic
1 1/2 tsp. Dijon mustard
juice from 1/2 lemon
pinch salt
pinch sugar
pinch freshly ground black pepper
1 cup balsamic vinegar
1/2 cup red wine vinegar
1 cup good olive oil
a few leaves fresh basil, parsley or other favorite herbs (optional)
pinch dried thyme, bdill

Finely puree garlic in food processor. Add other ingredients and
process until well mixed. Adjust seasonings to taste. Great over
mesclun salad greens or any favorite mixed lettuces. Also good
drizzled on ripe red tomatoes or as a marinade for grilled vegetables.
