Yogurt Dressing

12 oz nonfat yogurt
1 T raspberry vinegar

1/2 to 1 T olive oil
1 1/2 to 2 oz parmesan cheese

3 or 4 cloves garlic, pressed (optional)
salt, pepper
pinch cayenne
favorite dry herbs (dill, parsley, basil, etc.)

Grate the cheese in a grinder and mix with all other ingredients.
If using garlic, sprinkle salt directly onto the pressed garlic
and let it soak in the salt before mixing into the yogurt. A 1/4
cup serving of this dressing will have about 50 calories if the
smaller quantities of olive oil and cheese are used.
