Caesar Potato Salad
24 small potatoes, red or white or a mixture 2 tbsp. olive oil salt freshly ground pepper 3 green onions, sliced 8 slices bacon, cooked and crumbled 1/2 cup Caesar salad dressing Parmesan cheese, freshly grated
In medium saucepan, cover unpeeled potatoes in cold water and bring to a boil. Reduce heat, simmer 10 minutes and drain. Place potatoes in bowl, cutting larger ones if desired. Add olive oil, salt and pepper. Toss to coat and place in grill basket. Grill 15 minutes or until lightly browned over medium-high heat. Turn occasionally. Place potatoes in serving bowl. Add green onions, bacon and salad dressing, stirring to coat. Top with Parmesan cheese and serve warm or at room temperature.
