German Potato Salad
1-1/2 lbs (4 cups) peeled, cooked and diced potatoes
1/4 to 1/2 lb sliced fresh mushrooms
1 tomato, diced
1/4 cup sliced green onion
3 Tbsp chopped fresh parsley
1/2 cup salad or olive oil
1-1/2 Tbsp Worcestershire sauce
4 Tbsp lemon juice
2 to 3 tsp salt
1 small clove garlic, crushed
1/4 tsp coarse ground pepper
1/2 tsp oregano leaves
In a large bowl, combine potatoes through parsley. In a small
bowl, combine remaining ingredients, mix well. Pour dressing over
potatoes, toss gently. Chill thoroughly and serve. Serves 6 - 8.
