Herbed Potato Salad 3/4 lb. sm. potatoes 1/3 c. sliced green onions 1/3 c. white wine 1 tbsp. lime juice 2 tbsp. white wine vinegar 1 tsp. olive oil 1 tsp. Dijon mustard 1/4 tsp. salt 1/4 tsp. freshly ground pepper 2 tbsp. chopped fresh parsley Wash potatoes; pat potatoes dry, and slice into 1/4 inch thick slices. Arrange potato slices, overlapping slightly in rows, in a 10 inch quiche dish. Sprinkle with green onions, wine, lime juice, and vinegar. Cover with heavy duty plastic wrap and microwave at HIGH 10 to 12 minutes or until tender. Let stand, covered, 5 minutes. Uncover potato slices; drain and reserve liquid. Combine reserved liquid, olive oil and next 3 ingredients; stir with a small wire whisk until well blended. Pour mixture over potato slices and sprinkle with parsley. Cool. Cover and chill thoroughly. Yield: 4 servings
