Hot Potato Salad
8 medium sized potatoes 4 hard cooked eggs 1 garlic clove, minced 1/2 cup chopped celery 2 Tablespoons minced onion 1/3 cup finely chopped pickles 1/4 cup diced radishes 1/3 cup fat free mayonnaise 1/8 cup pickle juice
In large saucepan over high heat, add potatoes and enough water to cover potatoes completely. Cook potatoes in their skins for 40 minutes or until tender. Drain potatoes carefully, run under cold water, peel and dice; keep warm. Meanwhile, in medium saucepan over high heat, add 3 cups water and bring to brisk boil. Boil eggs for 10 minutes. Discard egg yolks and chop whites. Combine all ingredients except potatoes in large bowl; mix well. Add potatoes, toss until potatoes are completely coated. Serve warm. Makes 6 servings.
