HOT POTATO SALAD
6 medium potatoes, cooked, cubed 4 strips minced bacon, sauteed, crumbled 1/4 cup each chopped onion and celery 1 chopped dill pickle
1/2 cup water 1/4 cup vinegar 1/2 tsp each sugar and salt 1/8 tsp paprika, dried mustard chopped parsley or cress
Combine potatoes, bacon, onion, celery and pickle.
Boil together water, vinegar, sugar, salt and spices. Pour into skillet, add potatoes and chopped parsley or cress. Serve hot.
This recipe will vary with the type of vinegar and dill pickle used. I prefer farman's home style dills and a good quality cider vinegar.
