Cilantro Pesto Potato Salad
1 tbsp garlic
1 bunch cilantro
juice of 1/2 lemon
2/3 cup oil
1 cup pistachio nuts
1 pound potatoes, boiled, cooled and diced
1/2 cup Parmesan cheese, grated
Combine garlic, cilantro, lemon juice, oil, nuts, salt and pepper
Mix potatoes with Parmesan cheese and 1 cup of the cilantro pesto.
Serve at room temperature.
