Potato Salad
10 lbs red potatoes cooked, peeled (or not) and cubed
1 cup mayonnaise
2 to 3 Tbsp prepared mustard
4 Tbsp sweet pickle relish
1 cup large sweet onion - small dice
1/2 cup thinly sliced celery
2 to 3 Tbsp sugar
1/4 tsp salt
1/2 tsp black pepper
8 hard boiled eggs, 6 grated/mashed - 2 sliced
Paprika
Mix all ingredients well, garnish with the 2 sliced eggs and sprinkle
with paprika, chill very well.
