Potato Salad
3 qt pan full of potatoes (cubed)
4-5 hard boiled eggs
1/2-3/4 cup sweet pickle relish
1 jar pimento
1/4-1/3 cup chopped onion
1/3-1/2 cup chopped fresh parsley
Salt to taste (1-2 t)
Miracle Whip
The potatoes may be cooked ahead, and cooled before putting the
salad together, or, put together while the potatoes are still hot.
Chop the eggs, add and combine the rest of the ingredients down to
the Miracle Whip. The amount of dressing is variable to your taste.
Top with an arrangement of green pepper strips and sprinkle with
paprika.
