Potato Salad
1 bag new red potatoes, boiled with skins on 1/2 dozen hard-boiled eggs (the harder the better) 3 big cloves garlic, peeled and minced/pressed 1/2 stick butter mayonnaise to taste, set aside in a bowl salt pepper tarragon, sage, or both paprika
Chop the potatoes and eggs and throw them into a bowl together and set it aside. Melt the butter and saute the garlic with the tarragon. Don't brown the garlic; just let the butter absorb the flavor and then get it off the stove. Mix the garlic butter into the bowl of mayonnaise, then mix the mayonnaise into the potato & egg bowl. Add salt and pepper to taste, mix further, and sprinkle the top with paprika. Traditionally potato salad is a cold dish, but I like this best when it's still warm.
