Potato Salad 8 baking potatoes, cubed and boiled 1 medium onion, chopped 2 stalks celery, chopped 1 1/2 cup mayonnaise 1 1/2 tsp Dijon mustard 1/2 cup parsley, chopped 1 tsp dill weed, finely chopped 1/4 tsp white pepper salt and pepper to taste Boil potatoes to fork tender and mix with onion and celery. Set aside. Mix mayonnaise, mustard, herbs, and seasonings together. Fold mayonnaise mixture into potatoes and let sit refrigerated for a couple of hours. Makes enough for 4-6. Serve at picnics and summer social gatherings.
