Potato Salad

About 4-5 medium potatoes, peeled and cubed
1/2 cup or so good quality mayonnaise
1/4 cup sour cream
3-4 hard boiled eggs, chopped chunky (use 1 egg to 1 potato)
1-2 Tbsp dried dill
Finely chopped celery
Finely chopped white onion
Fresh chopped parsley
Salt and Pepper to taste

Boil potatoes until tender but don't over cook them. Drain and put
them in a large bowl. Add the onion, celery, eggs, parsley and
dill, mix lightly. Mix the mayonnaise and sour cream together then
fold into the potato mixture, if the potatoes seem dry, add more
mayonnaise a little at a time. Add salt and pepper to taste,
refrigerate for the flavors to blend.
