Almond Fruit Salad
2 cups cooked white or brown rice, cooled to room temperature
1 orange, peeled, quartered, and sliced
1/2 cup seedless red grapes, halved
1 medium kiwi fruit, pared, quartered and sliced
1/3 cup slivered almonds, toasted
2 tablespoons orange juice
1 tablespoon soy sauce
2 teaspoons vegetable oil
1/4 teaspoon minced fresh ginger
Combine rice, orange, grapes, kiwi fruit, and almonds in large
bowl. Blend orange juice, soy sauce, oil and ginger in small bowl;
pour over rice mixture. Toss lightly. Makes 4 servings.
Prepared poppy seed dressing may be substituted for dressing.
