Artichoke Rice

Artichoke-Rice Salad Makes 6 servings.
2 1/2 c water 1 c brown rice 1 jar artichoke hearts, (6 oz) marinated drained and thinly sliced, liquid reserved 1/3 c red onion, cut vertically into thin slivers 1 c chopped tomato 1 1/2 tablespoons reserved artichoke marinade 1 1/2 tablespoons red wine vinegar 1 1/2 tablespoons water 2 cloves garlic, crushed 1 t dried parsley salt and pepper to taste
Cook rice according to usual practice. Let rice cool 20-30 minutes covered. Add artichoke hearts, tomato and onion to rice. Toss to combine.
In a small bowl combine remaining ingredients. Add to rice and mix well. Serve warm or cold.
