NUTTY ASPARAGUS SALAD
1 lb. asparagus, steamed tender-crisp, then chilled 1/2 c. chopped walnuts 1-2 kiwi, peeled and sliced thin 3 cups salad greens (spinach, boston lettuce)
After laying down a bed of greens on 4 salad plates, lay chilled asparagus down, followed by kiwi slices, then sprinkle with walnuts. Then, mix up this dressing and sprinkle 2 T. on each salad:
Dressing
2 T. olive oil 2 T. raspberry vinegar 2 T. fresh lemon juice 1 1/2 t. brown sugar
