BARLEY AND CORN SALAD WITH JALAPENO AND LIME DRESSING 3 cups water 1 cup uncooked pearl barley 1 tablespoon minced jalapeno pepper (seeded & deribbed) 1/4 cup fresh lime juice 2 tablespoons vegetable oil 1/2 teaspoon salt 1/8 teaspoon black pepper 1 cup fresh corn kernels (or frozen kernels, thawed) 1/2 cup peeled, seeded, diced cucumber 1/2 cup unpeeled, diced tomato 1/2 cup diced green bell pepper 1/2 cup finely chopped red onion
Bring water to a boil in a medium saucepan; gradually stir in barley. Cover, reduce heat and simmer for 40 minutes or until barley is tender and water is absorbed. Let cool.
Combine jalapeno pepper and next 4 ingredients, and stir with a wire whisk. Combine barley, corn and next 4 ingredients in a large bowl; add dressing, tossing to coat.
