Barley Salad
Serving Size : 12
3 cups water
1 teaspoon salt
1 cup barley
2/3 cup green pepper, chopped
2/3 cup red pepper, chopped
16 oz corn, drained
3 tablespoons parsley, chopped
1/4 cup white wine vinegar
1/3 cup olive oil
1/4 teaspoon pepper
1/8 teaspoon paprika
Cook barley according to package ingredients.
Combine barley and remaining salad ingredients.
Combine dressing ingredients. Pour over barley mixture and toss.
Chill 8 hours.
