Black Eye Pea Salad

1 pkg (1 lb.) frozen Black Eye Peas
1 cup water
1 small red onion finely chopped
1 half large red bell pepper, finely chopped
2 Tbsp minced fresh parsley

1/4 cup olive oil
2 Tbsp white vinegar
2 Tbsp sugar
salt and pepper to taste
dash of hot sauce to taste (optional)

Heat peas with water to boiling, reduce heat, simmer and cover till
peas are tender. Drain well and cool. Combine with finely chopped
vegetables and parsley and season with a dressing to taste from
olive oil, sugar, vinegar and salt and pepper to taste. Dressing
should taste piquant.Serve room temperature or well chilled. Serves
6.
