Caesar Salad
1 raw egg 1/2 lemon 4 oz vegetable oil 2 oz olive oil 1 teaspoon red wine vinegar Pinch each rosemary, thyme, tarragon, dry mustard, salt, white pepper, garlic and shallots 1/2 cup Parmesan cheese 1/8 to 1/4 teaspoon dry mustard 2 to 4 anchovies Croutons made from day-old French bread 1 head Romaine lettuce (crisp, inner leaves only)
Mix oils, vinegar and herbs to make an oil and vinegar dressing. In a large bowl mash the anchovies and 1/2 teaspoon garlic that has soaked in olive oil. Add the egg, juice from 1/2 lemon, and dry mustard. Mix well with wooden spoon. Add about 1/2 of the leaves and toss gently to coat with the dressing. Sprinkle grated Parmesan to taste. Add the remaining leaves and repeat the process. Divide into two portions and place on chilled plates. Add croutons. Serves 2.
