Hot Chestnut Chicken Salad

6 cos lettuce leaves, chopped
1 bunch spinach chopped
6 oranges, peeled and segmented
3 tablespoons soy sauce
2 tablespoons maple syrup
1/4 teaspoon ground ginger
3 tablespoons vegetable oil
600g chicken breast, cut in strips
3 scallions (salad onions) chopped
1 teaspoon minced garlic
1/4 cup roasted chestnuts sliced.

In a large salad bowl, mix lettuce spinach and oranges. In a separate
bowl, mix soy sauce, maple syrup, ginger and three tablespoons
water. Set aside. In a wok or large frypan heat oil, add chicken
and stirfry about five minutes. Add scallions, garlic, chestnuts,
and reserved sauce, and cook for 30 seconds. Pour chicken and sauce
over greens and oranges.
