Chutney Rice Salad

3 cups cooked rice
1 cup chopped apple
1 cup chopped carrots
15-oz can garbanzo beans, drained
1/2 cup frozen petit pois peas
1/2 cup coarsely chopped cashews
2/3 cup currants or raisins
3 scallions, chopped
1 Tbsp lemon juice
1/3 cup chutney
1/4 cup oil
1 Tbsp ginger, grated
1/2 tsp turmeric
1/2 teaspoon garam masala

Toss the apples with a teaspoon of lemon juice. Heat the chutney
in the microwave. Whisk with the lemon juice and oil. Toss
everything together and season to taste with garam masala.
