Citrus Salad With Creamy Orange Dressing
1/2 cup canned mandarin oranges in light syrup, drained
1/3 cup canned pineapple tidbits in juice, drained
1 medium tangerine, peeled and coarsely chopped
2 Tbsp nonfat sour cream alternative
1 1/2 tsp powdered sugar
1 tsp frozen orange juice concentrate, undiluted
2 tsp flaked coconut, toasted
Combine first 3 ingredients; spoon mixture evenly into 2 serving
dishes. Combine sour cream, sugar, and orange juice concentrate;
spoon mixture evenly over fruit. Sprinkle with coconut.
