Pineapple Coleslaw
Yield: 6 servings
1 sm head of green cabbage, shredded
2 carrots peeled and finely, diced
1/2 c pineapple juice
1 c mayo
1 tb sugar
dash salt and white pepper
2 tb white vinegar
Combine everything and mix well. May add some finely chopped diced
fresh or canned pineapple.
Variations: Replace pineapple juice with apple juice or cider,
mango nectar, coconut milk, or orange juice.
