Corn and Frito Salad

16-ounce package of frozen corn, thawed but not cooked
1 small red bell pepper, diced
1 small green bell pepper, diced
1 small red onion, diced
1 small can sliced ripe olives, drained (optional)
1 cup Catalina Dressing
1 cup grated longhorn cheese
Frito Corn Chips

Place the corn, bell peppers and onions into a bowl that has a
tight fitting lid. Stir to incorporate and distribute vegetables
evenly. Add Catalina dressing and stir again. Cover and refrigerate
for a couple of hours.

When ready to serve, remove to a shallow dish. Sprinkle the grated
cheese over the top of the corn portion. Cover the top with Frito
Corn Chips. Do not stir, corn chips will get soggy. Serve
immediately.
