Corn Salad

4 cups corn (cooked)
1 cup finely diced red pepper
1 cup finely diced roma tomato
1/2 cup finely chopped red onion
1 or 2 canned chipotle peppers finely chopped
2 tbsp finely chopped parsley
1 tbsp extra virgin olive oil (plus extra for roasting)
salt and pepper to taste

Mix cooked corn, red pepper and red onion together in bowl.

Heat 1 tsp olive oil in skillet. Put in enough corn mixture to just
cover bottom of skillet once the oil is hot. Cook corn mixture
until it turns brown (some corn may burn but this is good because
it gives a really nice roasted flavour) Continue process until all
corn mixture is cooked.

Allow to cool on large tray

Once it is cool mix in parsley, tomato, chipotle pepper (you can
omit this if you don't like hot food or add whatever flavour you
like) olive oil, salt and pepper in mixing bowl

This will store well in fridge for about a week.
